Peel and slice in half) •Shaved fennel •Roasted red bell pepper, cut into bitesize chunks •Sliced kalamata olives •Sliced pepperoncini •Sheeps milk feta, crumbled •Filet of canned mackerel •Fried panko breadcrumbs •Top with balsamic vinaigrette: •50g gr 3Tbsp rainy mustard •75g aor 1/3c aged balsamic •75g or 1/3xnice extra virgin olive oil Shake vigorously to combine. Salmon Sushi Salad with Creamy Ginger Miso Dressing •8oz skin off salmon •250g or 2c Chopped Broccolini •Oil •Green leaf lettuce, chopped •Green cabbage, finely shredded •Pickled ginger, chopped •Roasted sunflower seeds •Roasted nori, cut into long thin strips Salt both sides of salmon, place salmon “skin” side down in oiled pan over med heat, press down for 30 sec. Flip to other side after 5min of cooking, reduce heat to low and continue cooking for about 2min) Wipe out pan and return it to med high heat. Add oil then broccolini and pinch of salt. Toss to combine. Cook for about 90 sec or until lightly charred and slightly tender. To build salad, add a handful of lettuce, a half handful or so of shredded cabbage, about ½ the cooked broccolini, pickled ginger, sunflower seeds, pinch of nori, and about ½ of the salmon, flaked. Top with miso dressing. Creamy Ginger Miso Dressing •1 egg yolk •45g unseasoned rice vinegar •25g sugar •15g soy sauce •20g chopped fresh ginger •20g white miso •150g neutral oil (i’m using light olive oil) •50g toasted sesame oil Spin all ingredients except oil with an immersion blender. Slowly stream in both oils. Southwest Steak salad with chili lime vinaigrette •8oz sirloin steak •Neutral oil (light olive, avocado, canola) •150g or about 1c raw pumpkin seeds •Salt •Pepper •Arugula •Corn (i’m using frozen and thawed) •Roasted red bell pepper •Avocado, diced •Sheeps milk feta cheese Season both sides generously of steak with salt and pepper. Preheat medium nonstick pan over medium heat. Add long drizzle of olive oil followed by steak. Press meat into pan for about 30 seconds. Cook for 5-6 minutes on side 1. After 5min or when side 1 has developed nice color, flip steak to side 2, add a bit more oil, and continue to cook for about 4-5 more minutes until temp reaches about 125F/52c (for med rare). Allow to rest for about 15 minutes. Slice. . Wipe out pan and heat over high and add 45g or about 1/3c neutral oil. When hot, add pumpkin seeds and a pinch of salt. Allow to fry for 30-45 seconds, stirring frequently. The seeds are done when beginning to turn golden in color and puff. Placed fried seeds on a layer of paper towels to drain and cool. To build salad, layer handful of arugula, a sprinkle of corn, chopped roasted red bell peppers, and avocado. Feta, fried pepitas. Add 4oz of sliced steak, and top with chili lime vinaigrette Chili Lime Vinaigrette •25g lime juice •15g champagne vinegar (or white wine vinegar) •30-35g honey •20g grainy mustard •½ clove garlic •10g or 1/4c shallot, diced and rinsed •1g cumin •3g Chile powder •3g salt •175g neutral oil (light olive, canola, avocado) •50g extra virgin olive oil Spin all ingredients except oil with an immersion blender until onions and garlic are broken down, then stream in neutral oil. Ingredients: 2 small cucumber ½ red onion 8-10 cherry tomatoes 1 tbsp cooking oil 1 can cooked chickpeas ¼ tsp salt ¼ tsp red chili ½ tsp ginger 3 tbsp fresh coriander 2 green chilies ¼ tsp roasted cumin ¼ tsp chaat masala ¼ tsp black salt 2 tbsp lime juice ¼ tsp pepper 1 tsp cooking oil Instructions: 1. Slice the cucumbers, red onion, and cherry tomatoes 2. Add cooking oil in a pan and add cooked chickpeas 3. Add salt to taste and red chili 4. Saute for 2-3 minute for medium high heat 5. Remove the chickpeas from heat and transfer to the bowl with cucumbers 6. Mix in fresh ginger, coriander, and green chilies 7. Ingredients: For Dressing: 2 tbsp extra virgin olive oil fresh coriander leaves - roughly chopped 3 cloves of garlic - finely minced 2 tsp dried oregano 3 tbsp lemon juice 3/4th tsp cumin powder 1/4 tsp chilli flakes For Salad: 200 gms lettuce tomatoes - chopped corn 1/2 cup kidney beans - boiled 1 avocado spring onion Method: To make the dressing: - In a small glass, add the extra virgin olive oil, fresh coriander leaves, minced garlic, dried oregano, lemon juice, cumin powder and chilli flakes and whisk all the ingredients well. To make the salad: - Roughly chop the lettuce into bite-sized pieces. - In a bowl, add the lettuce, chopped tomatoes, corn, boiled kidney beans, avocado, spring onion and little dressing and toss the ingredients. - Keep adding the dressing as you toss the salad through. - The delicious Mexican Salad is ready to be served. Using grams will deliver the closest outcome to what you see in my videos* CREAMY 2000g/2qt water 45g or 2.5tbsp salt 225g or 1/2lb elbow macaroni 25g or 2tbsp white distilled vinegar splash of olive oil 30g or 1/2c shallot finely minced and rinsed 60g or 1/2c celery, finely chopped 30g or 1/3c scallion, thinly sliced 100g or 3/4 cup frozen peas (thawed) 100g or 1/4lb bacon, crispy and chopped 5g or 1/2-3/4c fresh dill black pepper & salt to taste DRESSING FOR CREAMY Add the following into a high sided container: 1 egg 50g or 1/4c sour cream 25g or 2tbsp dijon mustard 15g 1 1/4tbsp sugar 10g or 3/4tbsp lemon juice 5g or 1tsp Worcestershire 5g or 3/4-1tsp salt 1/2 clove garlic. 300g or 1 1/3c neutral oil (light colored olive oil, grapeseed, canola) Blend with immersion blender and stream in oil. Add water and salt to med-lrg saucepan and bring to boil. Add pasta and boil for about 11min or until tender. Drain, reserving a few scoops of pasta water. Add vinegar and a splash of olive oil to drained pasta and allow to cool to room temp. Once cooled, add shallot, celery, scallion, peas, bacon. Add a couple of dollops of creamy dressing and a bit of pasta water and gently stir until pasta is well coated, but not swimming in dressing. Add dill, salt and pepper to taste, & stir to combine. PESTO PASTA SALAD 2000g/2qt water 45g or 2.5tbsp salt 225g or 1/2lb pasta (I use shells) 25g or 2tbsp white distilled vinegar splash of olive oil 300g or 1 1/4c pesto (recipe below) + more for garnish 200g or 1c mozzarella pearls, halved 200g or 1c cherry tomatoes, halved (I recommend sungolds) Strong pinch grated parm Add water and salt to med-lrg saucepan and bring to boil. Add pasta and boil for about 12min or until tender. Drain. Add vinegar and olive oil to drained pasta, stir, and allow to cool to room temp. Add pesto and stir to combine. Add mozz, tomatoes, and strong pinch of parm. Fold to combine. PESTO for SALAD Add the following to food processor and spin on high for 20-30sec or until well broken down. 100g or 3/4c toasted pine nuts or walnuts 100g or 5ish c basil 20g 1ish c parsley 30g or 1/2c shallot (minsed and rinsed) 100g or 1+c grated parm 225g or 1 3/4c cold olive oil 5g or 3/4-1tsp salt 30g or 2tbsp lemon juice CLASSIC MOM'S SYLE/DELI PASTA SALAD 2000g/2qt water 45g or 2.5tbsp salt 225g or 1/2lb pasta (I use rotini) 25g or 2 tbsp white distilled vinegar splash of olive oil 150g or 1/2-3/4c b-man's Italian Dressing (recipe below) 65g or 1/4c fresh mozzarella, diced 100g or 1/2c black olives, halved 50g or 1/2c pepperoncini, sliced 100g or 1 3/4c oil-packed sun dried tomatoes, sliced 60g or 1/2 of a med red bell pepper, diced small 60g or 1/4lb Genoa salami, sliced 75g or 3/4c grated parmesan Add water and salt to med-lrg saucepan and bring to boil. Add pasta and boil for about 11-12min or until tender. Drain. Add vinegar and olive oil to drained pasta, stir, and allow to cool to room temp. Add dressing, mozz, olives, pepperoncini, sun dried tomatoes, red bell pepper, salami, and grated parm. Stir to combine and add additional dressing, parm, and/or salt to taste, if needed. Whisk until well combined. Mediterranean Chickpea Salad Drain and rinse the chickpeas before placing them into a large bowl. Add on the cucumber, red onion, bell peppers, kalamata olives, feta cheese, avocado, mint, and basil. Set aside. Drizzle the dressing over the salad and gently toss until all the beans and veggies are coated in the seasoning. Adjust seasonings and enjoy! There's nothing like a delicious easy to make fresh Caesar salad recipe that is served with homemade dressing and croutons! Subscribe ► 🤍 Crazy enough Caesar salad originated in Tijuana, Mexico by an Italian named Caesar Cardini. Cardini moved to California in the early 20th century and often times during prohibition he, like many others, would head to Tijuana for a drink. He quickly opened a restaurant and a few years later created the Caesar Salad. Who got that story right? Ingredients for this recipe: • 2 heads of cored romaine lettuce cut into 1 ½” pieces • ½ cup shaved parmesan cheese • 1 croutons recipe • 1 Caesar dressing recipe (there will be some leftover) • sea salt and fresh cracked pepper to taste Serves 8 Prep Time: 5 minutes Cook Time: 0 Procedures: 1. In a large bowl add in the lettuce, cheese, croutons salt, and pepper. 2. Using a spoon add the desired amount of dressing to the inside of the bowl around the lettuce touching the bowl (see video). 3. Thoroughly toss the greens using tongs until the lettuce, cheese, and croutons are coated in the dressing and serve. Chef Notes: Make-Ahead: This recipe is meant to be eaten as soon as it is mixed together with the dressing. it can however be made the day before if the lettuce, dressing, cheese, and croutons are kept separate covered in the refrigerator. How to Store: Place each ingredient in its own plastic container or bag and keep in the refrigerator for up to 3 days. This recipe will not freeze. Feel free to add in more dressing, croutons, or Parmesan cheese as you see fit. Be sure to serve the salad immediately after tossing in the dressing. If there is another romaine lettuce shortage, green leaf or red leaf lettuce as a substitute will work. Kale is sometimes used as a substitute or as the main green in this recipe. Get the recipe here: 🤍 Ingredients 2 (15-oz/439g) cans chickpeas, rinsed and drained 1 English cucumber, peeled and diced 2 roasted red peppers, diced 5-6 scallions, thinly sliced 1-2 cups grape tomatoes, halved 4 oz (115g) feta cheese 1/2-1 cup Kalamata olives, pitted and chopped a handful of fresh parsley, finely chopped 2-3 tablespoons finely chopped fresh mint leaves 2-3 peperoncini peppers, sliced (optional) The Dressing: 1/4 cup olive oil 2 tablespoons vinegar 2 tablespoons fresh lemon juice 1 garlic clove, grated 1 teaspoon dried crushed oregano salt, to taste freshly cracked black pepper, to taste Instructions Make the Dressing: Combine all of the dressing ingredients, except the salt and pepper, in a bowl and whisk them together. Combine all of the salad ingredients in a large bowl and season with salt and pepper. Crumble the feta cheese on top and pour the dressing over the salad. Toss together and serve immediately or chilled. Notes Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
